Meatloaf Meatballs

I married into a family who loves meatloaf; the ultimate comfort food. My mother-in-law makes this meat loaf that I cannot duplicate; it is hearty, rich and delicious. You dream about leftovers before you’ve even eaten your first slice.  My husband always takes a couple slices home for cold meatloaf sandwiches.  He savors the flavors the day after by combining cheddar cheese, a slice of his mom’s precious meatloaf and a crazy squiggle of ketchup, sandwiched between two pieces of soft white bread.  This is Erik’s perfect dinner, with an equally yummy left over option.

My twist on Meatloaf is Meatloaf Meatballs. Like I have mentioned before, if you make a meal into a meatball, kids will enjoy it that much more. Technically, it could be made into a sandwich the day after too, but my crew always seems to gobble everything up. You try to make enough for left overs and then they just eat more!

I am keen on the sausage and ground beef combo in meatloaf, it creates a bold flavor. Meatloaf cannot be complete without ketchup and bacon to top it off. So each of my Meatloaf Meatballs will be topped with him Hempler’s bacon (salty and crisp) and my husbands favorite Heinz ketchup. I have tried to convert him to many types of organic ketchup- but he wants me to keep it real and give him Heinz. 

The truest thing many of us have is a family. Families experience joy and pain, sometimes they grow more together through the good and tough times and other times it is just the opposite. No matter where your family is in the process of life, I challenge you to think of the gifts of your family.

Family dinner is a gift both Erik and I were given. Our Mothers – Jackie and Patricia, cooked nightly meals to nourish their families. I try to do the same for my family. Being together at some point in the day, discussing events and being with my children and husband is important. It is far from perfect most nights, but it is treasured.  Special meals with the “Incredibles” is how I choose to end my day, around the table with chaos and laughter. Cheers to sharing a meal with those you love, either your family or your friends (the family you choose).

Bacon and ketchup to top- in any order you desire. Bake away, turn oven to 350 and then amp up to 375 in order to get the meatballs crisp.  Then turn back down.

Meatloaf Meatballs
A Meatloaf in a Meatball with Pork Sausage, Ground Beef and Bacon. You can’t go wrong with these flavorful meatballs.
  • 1 and 1/3 lbs Ground beef 85/15
  • 2/3 lb Natural Jimmy Dean sausage
  • 1 tablespoon Ketchup
  • 1 teaspoon Barbeque sauce
  • 1 Egg
  • 1/2 cup Chopped onion
  • 1/8 cup Parmesan cheese
  • 2 cloves Garlic
  • Dash Worcestershire sauce
  • Salt and Pepper for individual meatballs
  • Extra Ketchup for on top
  • 3 to 4 slices Bacon
Add both sausage and ground beef to a bowl. Crack in an egg and add other wet ingredients ketchup, BBQ sauce and Worcestershire sauce.

Finely dice garlic and onion and add to the bowl.

Add the binders: bread crumbs and Parmesan cheese. Mix throughly with hands and roll into balls a little bigger than an inch.

Place on a baking sheet covered in parchment.

Top each meatball with salt and pepper. Then add finishing touches of the small slice of bacon and ketchup.

Put into the oven preheated to 350, amp up heat to 375 degrees and turn back down when fully heated. This allows for the bacon to get cooked through. Cook for the remainder of the time at 350 degrees. They should be in the oven for at least a half hour, depending on your oven – more time may be needed.
